Today’s ‘Aprons Simple Meal’: Barbecue Meatballs Over Mash Potatoes

In this in-store interview series, we speak with top Publix Cullman Chef, Karri Oden. She walks us through everything you need to know about today’s Aprons Simple Meal: Barbecue Meatballs Over Mash Potatoes.

We also chat with the Publix Turkey Lady – Elizabeth Holladay. As one of the store’s top Event Planners, she is busy informing customers about the wide range option options available from Publix for their upcoming Thanksgiving meals:

BARBECUE MEATBALLS OVER MASHED POTATOES

Ingredients
1 can reduced-sodium beef broth
2 Tbsp tomato paste
1 Tbsp cornstarch
1/8 cup apple cider vinegar
1 1/2 teaspoons Worcestershire sauce
12 oz refrigerated mashed potatoes
1/4 tsp yellow mustard
10 oz frozen beef meatballs (1/2 bag)
1 sweet onion
2 trays meatballs and potatoes
1 clamshell cups/lids
1 bag lemon and onion
5 cups paste, cornstarch, vinegar, sauce, mustard

2 lemons

Steps
1. Dice onion (1/2 cup). Squeeze lemons for juice (1/4 cup). Place in large sauté pan: onions, 1/2 cup broth, tomato paste, mustard, lemon juice, vinegar, Worcestershire, salt, and pepper; stir until combined. Bring to a boil over medium-high heat.
2. Reduce heat to medium-low; stir in meatballs. Cover and cook 10 minutes. Microwave potatoes 2 minutes; stir, then microwave 1–2 more minutes or until 160°F.
3. Whisk 1/8 cup broth and cornstarch until combined. Pour into pan; cook 5–6 more minutes, stirring occasionally, or until sauce is thick and meatballs are 165°F. Serve over mashed potatoes.
